Applebees Baby Back Ribs
Applebees Copycat Recipe Secrets

Ingredients

-3 racks of about 1 pound each pork baby back ribs,
each cut in half

Barbecue Sauce

-1 cup ketchup
-3 T dark brown sugar
-1/4 cup apple cider vinegar
-3 T Worcestershire sauce
-1/2 Tsp salt
-1 Tsp liquid smoke

-Get a large enough pot to cover ribs. Fill pot with water and place the ribs in the water. Make sure the water completely covers the ribs. Bring the water to a boil. Reduce the heat. Cover. Simmer for one hour or until the ribs are tender when you poke them with a fork.

-Mix all of the sauce ingredients together in a medium sauce pan and bring them to a boil. Reduce the heat. Simmer for 30 minutes, uncovered, stirring often or until you see the sauce start to thicken.

-Turn-up broiler. You may want to put some foil on your broiler pan so the sauce doesn't stick to it. Put your ribs with the meat side down onto the broiler pan. Brush using one half of the sauce. Broil for 6-7 minutes. Keep the ribs at least 4-5 inches from the broiler flame.

After 6-7 minutes, turn the ribs over. Brush on the remaining sauce. Broil another 6-7 minutes or until the edges are slightly charred. Get out your favorite serving platter. Remove ribs from broiler oven and enjoy!

Provided by:Alice DeLuca.

Mix in bowl:
1 cup brown rice flour
½ cup potato starch flour
¼ cup tapioca flour
¼ cup cornstarch
1 tablespoon gluten-free baking powder
1 tablespoon sugar
½ teaspoon salt

Mix in a second bowl:
1 ½ cups almond milk
3 eggs
4 tablespoons vegetable oil

Stir the two mixtures together. Heat a non-stick pan on medium, add butter or margarine. When pan is hot, pour batter to form pancakes (½ cup makes a beautiful big pancake), and sprinkle with frozen blueberries. Wait until the bubbles that form in the pancake start turning into holes (if you dont wait long enough the pancake will be hard to turn) but not so long that the pancake burns, and then flip over. When other side is cooked, transfer to plate and serve with real maple syrup.

Cooking Tips

Three Secrets of Jerk Cooking:

- Marinating. The longer meat marinates in the seasonings, the more
robust the flavor.

- Slowly grilling meat over a low fire. When cooking at home, meat
can be roasted in a low-temperature oven for one to two hours, then
finished on the grill.

- Wood chips. Adding wood chips to your grill's fire enhances the
flavor. Pimento (allspice) wood boosts authentic jerk flavor. So do
apple wood, mesquite or hickory chips. Soak the chips in water so
they don't burn immediately. Allowing the smoke from the chips to
permeate the meat will create an authentic jerk flavor.
